Fermentation & Production Process:

  • Raw Material: Premium non-glutinous rice (Oryza sativa)

  • Fungal Strain: Monascus purpureus (proprietary high-yield strain)

  • Fermentation Process:

    1. Rice washing and soaking (4-6 hours)

    2. Steaming at 121°C for 30 minutes

    3. Cooling to 30-35°C

    4. Inoculation with Monascus purpureus spores (0.5-1.0%)

    5. Solid-state fermentation at 28-32°C, 80-90% humidity

    6. Fermentation duration: 14-21 days

    7. Drying at 50-60°C to moisture < 10%
